Summer is here and now is the time to enjoy your produce from your garden. An excellent way to increase nutrients into your diet.
Here is a recipe from last nights dinner which is delicious.
Aubergine, Beetroot, and Red Pepper and tomato salad.
Peel and chop the beetroot into cubes.
Add chopped red pepper
Add chopped aubergine
Add tomatoes sliced.
One tablespoon fresh thyme
Glazed balsamic vinegar.
Place all the ingredients in an oven dish and drizzle over some local olive oil and fresh thyme and some rock salt.
Bake in a moderate oven for 40 minutes and if browning then cover with some tin foil.
Remove, Cool, and toss through some local olive oil and some glazed balsamic vinegar and sprinkle with chopped parsley. Delicious.
