Julia's Aubergine Dip.
Delicious on seed crackers or with vegetables
two cloves of garlic
one teaspoon herb yeast salt ( available at my clinic)
Place the aubergine chopped up in an oven dish and drizzle over some olive oil, herb yeast salt and fresh thyme.
Bake in a moderate oven for 40 minutes.
Remove and place in the blender with the herb yeast salt, garlic., and some olive oil and juice of half a lemon.
Blend for one minute and place in a bowl and serve.
