Georgia and I have been creating delicious dinners every night.
Here is what we created last night. Delicious Crepes
300 mls milk or almond milk if dairy free.
One desert spoon sunflower oil
Two and a half cups of plain flour or flour of your choice
300 mls water
Using a whisk combine eggs, liquid and oil. The add flour beating until smooth.
Cook using a crepe maker or either heat up a hot fry pan. Grease and pour over some of the bater.
Two red onion finely chopped
two tablespoons olive oil
One cup of grated carrot
one cup of grated zucchini
Two cloves of crushed garlic.
smoked salmon, ham or vegetarian option of toasted cashew nuts.
Place the finely chopped onion in a heated pan with the olive oil and saute until the onion has caramelized. Add the garlic, carrot and zucchini and.cook for a few minutes. Grind over some rock salt.
Place the crepe on the plate with some cream cheese, salmon, or ham or cashew nuts and add a spoonful of the vegetable mixture with some spinach leaves. Roll up and enjoy.
