Now that autumn is coming it is a great time to bottle and preserve garden produce for those cooler months when produce becomes expensive.
I have just bottled lots of apricots, frozen beans, cauliflower, broccoli, tomato sauce. I have also planted out my winter vegetables and new carrot and beetroot seeds are sprouting forth.
Recipe for tomato and pepper sauce.
three red peppers
two cloves garlic
One teaspoon herb yeast salt.
Place in a pot on the stove and cook until the pepper is soft. Place in a blender for two minutes and blend until creamy. Cool and freeze in containers for the winter. Delicious on udon noodles with a dash of pesto.
